Monday
Loaded Potato Ranch Chicken Casserole
YA’LL…. When I love a recipe, I LOVE a recipe. I was blown away with this delicious recipe and I will be making it again. Think of a potato skin, mixed with loaded baked potato soup. It was absolutely delicious and The Country Cook hit it out of the park with this one. I highly recommend it and excited to make it again. Plus….. Kiddo approved!!!
Tuesday
Taco Pie
If I’m being honest, I am a bit bored with tacos. We have them so often that I am tired of them. And this recipe wasn’t any different. It just lacked the pizzazz that a taco pie should have, but it was good. I felt the process they used to cook the meat lost a lot of the flavor, so I added 3 tablespoons of homemade taco seasoning. Wednesday
McDonald’s
We actually ended up postponing this nights meal for another night, and opted for take out. I had a stressful day and my anxiety was crashing in so I thought it wise to call it quits and have someone else do the cooking.
Thursday
Creamy Garlic Shrimp
We had our good friends come into town on Thursday, so of course I had to make something with garlic and shrimp! This meal from The Kitchn was absolutely delicious. I was a little nervous that I had curdled the cream when I added it, but it tasted so good. For the kiddos I made some noodles with alfredo sauce on it just in case they didn’t like it, but they ate more shrimp then we did! I really enjoyed this one and will make it again!!
Friday
Country Ham and Potato Bake
After a busy day of friends and swimming, I needed a wholesome comfort food for dinner. I love a soup from Olive Garden, and this totally reminded me of it. I did, however, cut the potatoes wrong and they were too thick so they didn’t cook all the way through. But it was cheesy and delicious and I will definitely make it again. It also calls for an 8X8 dish, but I would do a larger one since it’s so much volume. Head on over to Must Love Home for this delicious recipe.
Weekend
Leftovers
This weekend was exhausting as we were in Scottsdale visiting family, so easy meals and leftovers won the dinner time battle. Saturday, I made the kiddos boxed mac and cheese and Sunday we did leftovers. Pretty good though, if I do say so myself.
