This past week was filled with some delicious meals I made for my family, and I’m excited to share them with you. While I don’t own the rights to most of these, I will be linking the websites I found them at. Over on Pinterest, I pin all of my recipes so you have easy access to them if you’d like to pin them yourself. I will be sharing what we thought about each meal and if it will be a regular in our house or a flop that we will never mention again. Let’s get to it! Also, I am sharing a recipe with you that my family loves, so make sure to let me know what yours thinks. Even my kiddos gobbled it up!!

Monday- Pineapple Teriyaki Chicken

Sally’s Baking Addiction

I have made quite a few teriyaki recipes in my time as a home chef, but haven’t found one yet that was delicious enough to make again. Most of them are way too salty and not sweet enough. When I think of teriyaki, I want it to be sweet and something my kiddos will devour. Finally, I found one!!! We were pleasantly surprised by this, and how easy it was to make!! Tuesday- Balsamic Salmon

Good old’ Giada. Always bringing us some super fancy, boujee recipe that I hope my kiddos will enjoy. But every time it’s just a little too much for my young ones palettes and so I end up putting the cookbook away and never looking at it again (why do I even still have it?). This was yet, another flop. Although it was tasty to me, my kiddos both ended up eating chips for dinner because they didn’t enjoy my meal. And I was fine with it. I’m glad they are honest and tell me what they enjoy and what they don’t. The recipe for the meal is here if you’d like to take a peek. But if you have small children, I don’t recommend it.

Wednesday- Cheesy Spaghetti + Meatballs

This meal was a HIT! It was cheesy, full of protein and the noodles are so fun to eat. I am so excited to share it you, and make sure to let me know what your family thinks down below!

Cheesy Spaghetti & Meatballs

Cheesy Spaghetti & Meatballs

Yield: 6
Prep Time: 5 minutes
Cook Time: 20 minutes
Total Time: 25 minutes

A delicious and inexpensive family friendly meal. Sure to please even your pickiest eater.

Ingredients

  • 1 lb Rotini Pasta, You can use whatever pasta you have on hand
  • 1 Jar Pasta Sauce, Whichever brand you prefer
  • 1 Bag Frozen Meatballs
  • 1 lb Ground Beef, You can use whatever meat you prefer
  • 2 cups Shredded Cheddar Cheese

Instructions

  1. Brown ground beef until no longer pink; drain fat and return to pan
  2. Add pasta sauce to pan and let simmer until warm
  3. Cook meatballs per instructions on package. Once done, add to the meat sauce; turn to low and let it warm up
  4. Cook pasta in boiling water for 10 minutes; drain
  5. Once drained, add pasta to the sauce/meat mixture and stir to combine
  6. Top with cheese, cover with lid and let the cheese melt
  7. Serve warm and enjoy

Thursday- Fourth of July BBQ

We had such a fun 4th of July BBQ, and enjoyed hosting for the first time. We had the basic hot dogs and hamburgers with a bunch of sides like potato salad and cupcakes! It was definitely a great spread.

Friday- Garlic Porkchops

This recipe was the best pork chops recipe I’ve EVER made. Made me think of my mom’s pork chops from when I was little. They were juicy, creamy and kiddo approved! Head on over to Kitchn for the recipe.

Weekend- Leftovers + Easy Meals

I always go into the weekend with the best intentions to cook a meal, but it usually never happens. We might eat leftovers or an easy meal like mac and cheese. I’d rather have it that way, to be honest. One less thing to be in charge of on the weekend. This time was no different.
